Any fast & easy recipes using ripe bananas?


Does anyone have simplified recipes calling for over ripe bananas? All of my recipes that call for over ripe bananas are time consuming & require a lot of other ingredients.
Banana bread is the most obvious. And it is easy. Look for recipes on

    Make banana fritters. Make a batter sort of like pancake batter. Dip the lengthwise sliced bananas in it, then deep fry. Drain on paper towels. Sprinkle with powdered sugar.

    When I have too many ripe bananas on hand, I just mash them, adding some lemon juice to keep them from turning brown. Measure out in 1 c. portions and freeze in containers. Then just defrost in the microwave whenever you need them for a recipe.References :

    I would say banana bread pudding. It's easy. Just cut up cubes of day old bread, soak them in an egg bath (mixture of egg, milk, a little sugar and vanilla extract if you have some on hand). Slice up the ripe bananas and mix them into the bread mixture. Add in some nuts or dried fruits for texture if you want. Butter up a dish and pour the mixture in. Place a few pieces of butter on top as well. Then bake the dish in a preheated 350 degree oven for about 20-30 minutes or until it's golden brown. Enjoy!References :

    3 c. sifted flour
    1 tsp. cinnamon
    1 tsp. salt
    1 tsp. baking soda
    1 (8 oz.) can crushed pineapple with juice
    2 c. diced ripe bananas
    2 c. sugar
    1 1/2 c. oil
    3 eggs
    1 1/2 tsp. vanilla

    Mix all dry ingredients, then sift them together. Add bananas, oil, pineapple with juice, vanilla, and eggs. Stir all together. Do not beat – just blend. Bake in a greased and floured tube pan at 350 degrees for 1 hour and 20 minutes. Cool on rack before removing from pan.References :

    I just like to add them to the blender with milk, choc syrup or choc drink mix powder (Quick), & whip up a quick milk shake. You can add anything. Stawberries would be really great too.References :

    You can just freeze the banana itself in its skin if you need to do something quick . It defrosts fine and slips out of its skin. I do think the comment earlier about mashing 1st with a bit of lemon juice is better if you have time- especially in preset 1cup portions.

    The closest was the cookies. Another thing you can do (for the kids, of course!) is mush up overripe bananas into a cookie cutter and pour melted chocolate over it.

    This is an old conversation, but hey, in case anybody else (like me) stumbles across this in a web search:
    One of my favorite ways of using up ripe bananas (and this is especially helpful if you’ve got, like, just one to use up) is mashing it up with two egg yolks (or just one egg). That is, two yolks to one banana. Add a little vanilla and fry in a pan like scrambled eggs, with canola oil or butter. Add cinnamon or sugar if you like. It’s really quite decadent.

    I also stumbled across this a little late. Depending on how many bananas you have Layer graham crackers in the bottom of pan (we use a 9×13 for about 6 ripe bananas) then layer sliced bananas over the graham crackers and repeat the layer.. Graham crackers should top it off then top with cream cheese icing and refigerate overnight.. So simple but delicous!!

    Peel and cut in half crosswise. Insert a popsicle stick and freeze. Makes a great snack, even without chocolate.

    Or cut in 4 pieces crosswise, put each piece in an individual wax coated Dixie cup. Insert a popsicle stick, then add fat free or sugar free vanilla pudding and freeze.

    Lastly, you can make Banana French Toast. I mix up eggs, milk, and a little vanilla. Put in a blender and add banana to taste. This is the batter for your french toast. To get fancy, warm some maple syrup and add some orange zest for your topping. Yummy.

    BEST SIMPLE BANANA RECIPE!!! Baked bananas sliced once the long way sprinkled with cinnamon and lime juice then baked for around 15min..! The flavor REALLY comes out when baked! So sweet & Absolutely AMAZING!!! :) Also, ice cream! Banana cocoa powder, and peanut butter icecream…you can add sweetner too like sugar, honey, syrup, agave, splenda and try other things in it. I found the icecream recipe on pinterest….what makes it like icream is chopping the bananas, freezing for an hour then blending in food processor- 1st looks icey then turns into cream! I’ve heard banana pudding is easy too.

    Great Banana Pancakes with NO flour and NO sugar – Guten Free

    2 ripe bananas
    4 eggs
    2 T ground flaxseed
    2tsp cinnamon
    (nuts optional)
    cook in coconut oil
    Mix the above in a blender and you have wonderful pancakes for two.
